1. Preheat the oven to 175°C, gas mark 3, 330°F. 2. Grease and lightly flour an 8-inch round cake tin. 3. Peel and slice the apples. Place in a saucepan with 50mls (2flozs) water and boil until the apples have gone soft. Liquidise the fruit and add 10mls (2tsps) of the Fruisana Fruit Sugar. Chill. 4. Cream the margarine and remaining Fruisana until pale and fluffy. 5. Add the eggs one at a time, beating well after each addition. Sieve the flour, baking powder and mixed spice and add to the mixture. 6. Add the chilled apple sauce and mix thoroughly. 7. Bake for 1 hour, or until golden brown. 8. Allow to cool then chill for a few minutes before turning out.
