1. In a large bowl place all the prepared fruits and nuts. Stir in the Fruisana, mixed spice, lemon zest and juice and rum and mix thoroughly.
2. Leave to stand for a minimum of 6 hours.
3. Peel and chop the apples and cook in the microwave for 4-5 minutes until the apples can be beaten to a purée. Stir into the fruit mixture.
4. Gently melt the vegetable sute in the microwave for 1 minute then stir into the fruit mixture.
5. If you do not own a microwave, place the prepared apples in a small saucepan, over a gentle heat and cook until a smooth purée. Then over a gentle heat, melt the suet. Thoroughly stir into fruit mixture.
6. Place into warmed and sterilised jars. Place a wax disc on top and seal. Store in a cool place until required.
